ZuckerO Sugar-Free Vanilla Cake

Ingredients
- 1 ½ cups almond flour (or regular flour if you prefer)
- 2 tsp baking powder
- ¼ tsp salt
- ½ cup butter (softened)
- ½ cup ZuckerO sweetener (equivalent to ½ cup sugar; adjust to your taste)
- 3 large eggs
- 1 tsp vanilla extract
- ½ cup unsweetened almond milk (or regular milk)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a medium bowl, whisk together the almond flour, baking powder, and salt.
- In a large bowl, cream together the softened butter and ZuckerO sweetener until light and fluffy (about 3 minutes).
- Add the eggs one at a time, beating well after each addition, and then add the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the almond milk. Start and end with the dry ingredients.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
