ZuckerO Sugar-Free Vanilla Cake

A light, fluffy, and moist vanilla cake made with ZuckerO sucralose-based sweetener, perfect for anyone looking to enjoy a sugar-free treat!

Ingredients

  • 1 ½ cups almond flour (or regular flour if you prefer)
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup butter (softened)
  • ½ cup ZuckerO sweetener (equivalent to ½ cup sugar; adjust to your taste)
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup unsweetened almond milk (or regular milk)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a medium bowl, whisk together the almond flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and ZuckerO sweetener until light and fluffy (about 3 minutes).
  4. Add the eggs one at a time, beating well after each addition, and then add the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the almond milk. Start and end with the dry ingredients.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
